Eggless Cinnamon Cake

Another afternoon wide open for me to choose anything i wanna do & i chose to bake!

I love cakes and cookies (well, who doesn’t?) but i am too conscious for my own good about what i eat (calories!!!) Last night i watched this show called “Recipe Rehab”. It inspired me to think about making the good stuff that we love to eat, healthy…i.e. low cal, low fat…

So i did the best i could. Chose to make cake out of wheat flour and brown sugar.

Ingredients required:

Wheat flour – 1 cup
Cinnamon powder – 1 teaspoon
Brown sugar – 1 cup
Baking Soda – 1 teaspoon
Baking powder – 1/4 teaspoon
Curd – 1/2 cup
Water – 1/2 cup
Cooking oil – 1/3 cup
Nuts – for garnishing

Method of making:

Step 1: Mix wheat flour, cinnamon powder, baking powder and baking soda together. Sieve well if necessary.

Step 2: If brown sugar is not used, it generally becomes very hard. To soften the sugar,  microwave it for 20 – 40 seconds with a moist cloth covering the dish. It loosens up a bit.

Heat the water and brown sugar together to make a syrup.

Step 3: Mix the curd, oil and the sugar syrup together.

Step 4: Combine both the dry mixture and the wet mixture and beat well to get the batter consistency.

Step 5: Grease the baking pan and pour the batter into it. Make sure the pan has enough room for the cake to raise.

Step 6: Pre heat oven to 350 F and bake the cake in 350 F for 30-35 minutes.
